Equipment: stand mixer, measuring spoons, beer mugs, piping bag (optional)
Ingredients:
Drink
- 2 liters cream soda, chilled*
- ¼ teaspoon caramel extract
- ¼ teaspoon butter extract
- 2 tbsp butterscotch syrup/topping*
Topping
1 cup heavy whipping cream
¼ cup butterscotch syrup/topping
2 tbsp powdered sugar
Instructions:
- In a large pitcher, mix the cream soda with 2 tablespoons of butterscotch syrup/topping and the caramel and butter extracts. Tip: mix a small amount of soda with the other ingredients first until well blended, then add the rest of the soda to retain carbonation. Set aside.
- In a large mixing bowl, use an electric mixer to whip heavy cream until it forms stiff peaks.
- Add butterscotch syrup/topping and powdered sugar. Mix to combine.
- Pour the soda mixture into clear cups or mugs. Pipe butterscotch cream topping over the butterbeer. Drizzle with additional butterscotch syrup/topping.
- Serve and enjoy!

Cream Soda
If you can’t find cream soda at the store, or you just don’t want something as sweet as commercial sodas, consider making your own cream soda at home using carbonated water, granulated sugar, and vanilla extract.

Butterscotch
Again, if you can’t find this ingredient at the store, or you’d like to have more control over the ingredients, you can make it yourself at home with butter, dark brown sugar, heavy cream, salt, and vanilla extract.
