Harry Potter Recipe: Cream Soda for Butterbeer

Serving: 1 cup syrup, approx. 5 cups soda

Equipment: medium saucepan, measuring spoons, measuring cup, pitcher (for mixing)

Ingredients:

  • ¾ cup granulated sugar
  • ¾ cup water
  • 2 tbsp vanilla extract
  • 1 tsp lemon juice
  • plain soda water (for mixing)

Instructions:

Syrup
  1. Heat the sugar and the water in a saucepan until the sugar is completely dissolved.
  2. Remove the syrup from the heat and stir in the vanilla extract and the lemon juice. Let the syrup cool and then store in the refrigerator.
Soda
  1. In a glass, mix 1 ½ to 2 ounces of the syrup into 8 ounces of soda water.
  2. To make a larger batch, use a 1:4 ratio of syrup to soda water. Mix syrup and a small amount of soda water in the pitcher first to incorporate, then add the rest of the soda. This prevents unnecessary loss of carbonation.

Notes

  • The quality of your extract makes a difference. Be sure to use pure vanilla extract, not artificial flavouring.
  • Feel free to experiment with sugar measurements to suit your personal taste. Alternatively, you can use honey, agave syrup, or an artificial sweetener of your choice.
