Serving: 1 cup syrup, approx. 5 cups soda
Equipment: medium saucepan, measuring spoons, measuring cup, pitcher (for mixing)
Ingredients:
- ¾ cup granulated sugar
- ¾ cup water
- 2 tbsp vanilla extract
- 1 tsp lemon juice
- plain soda water (for mixing)
Instructions:
Syrup
- Heat the sugar and the water in a saucepan until the sugar is completely dissolved.
- Remove the syrup from the heat and stir in the vanilla extract and the lemon juice. Let the syrup cool and then store in the refrigerator.
Soda
- In a glass, mix 1 ½ to 2 ounces of the syrup into 8 ounces of soda water.
- To make a larger batch, use a 1:4 ratio of syrup to soda water. Mix syrup and a small amount of soda water in the pitcher first to incorporate, then add the rest of the soda. This prevents unnecessary loss of carbonation.
Notes
- The quality of your extract makes a difference. Be sure to use pure vanilla extract, not artificial flavouring.
- Feel free to experiment with sugar measurements to suit your personal taste. Alternatively, you can use honey, agave syrup, or an artificial sweetener of your choice.
